Currently, a key agricultural practice is underway in the Cognac vineyards——raising the branches. This is far more than simply "tidying up the branches". Instead, it's a vital step influencing the future quality of Cognac!
In the vineyards, the winegrowers are carefully raising and securing the vines vertically by hand. Raising the branches vertically, on one hand, could improve airflow through the vineyard. On the other hand, exposing the grape clusters more directly to the sunlight boosts photosynthesis, promoting even ripening and helping the grapes to accumulate sugars while developing richer flavor compounds.

Each branch carefully raised and every bunch of grapes bathed in sunlight will contribute to the energy reserve for next year's Cognac.
