"Young" Cognac: Try mixing it
Young Cognac, such as V.S and V.S.O.P, are suitable for drinking as aperitifs or mixed. More often than not, people add ginger ale or tonic water to make a simple glass of mixed Cognac as an aperitif to begin a meal.
Aged Cognac: Enjoy by itself
The rich and subtle flavors of aged Cognac, such as X.O. or older Cognac, require a process to taste slowly. The aged Cognac, therefore, is more suitable for an after-dinner drink, without adding too much "embellishment", since the flavor itself has enough layers to enjoy, requiring a serene moment to appreciate its rich nature.
There is no need to add water or ice to taste aged Cognac, which can affect people's perception of its flavor. A glass of neat aged Cognac can be a memorable tasting experience for novices.
